Ingredients
- 600 g white chocolate couverture pure cocoa butter
- 9 g pure matcha powder
- 1 pinch of salt
- 1 pinch of vanilla powder (optional)
- Optional add-ins: broken cashews, macadamia, rice crispies, crispy dried raspberries or strawberries
Tools Needed
- Polycarbonate mould or silicone mould in a flat tablet shape
- Food processor
- Bowl and spatula
- Chocolate thermometer
How to Make Your Matcha Chocolate Tablet
- Gently melt the white chocolate in the microwave, keeping it under 45°C. For best results, heat at 50% power in 20-second intervals, stirring well each time.
- In a food processor, combine the melted chocolate with matcha, salt, and vanilla powder. Blend until smooth and creamy.
- Pour the mixture back into a bowl and temper using a thermometer. Proper tempering ensures a glossy finish and perfect snap.
- Fold in your chosen crunchy elements, then pour the chocolate into your mould. Gently tap or shake to level the surface and remove air bubbles.
- Refrigerate for 15 minutes or until fully set.
- Keep wrapped in a cool, dry place. If refrigerated, allow 10 minutes at room temperature before enjoying experiencing its full flavour and texture.
Tip: Sprinkle a touch of matcha powder on top before setting for a visually striking, café-inspired finish.
